Is it just me, or did Trader Joe’s recently become trendy? I remember when I was a kid, my mom and I would take the occasional trek out to the one Trader Joe’s a half hour away. It seems like they’re everywhere now – and I feel comfortable speaking for all of us when I say, thank goodness.
I love finding new products at Trader Joe’s. I’ve made so many quick and easy weeknight meals, thanks to their awesome specialty products. I wanted to share a few with you today!
Mexican Soyrizo Melt
This three-ingredient combo can be used in a variety of ways. It’s literally a one pan dump recipe. Combine ingredients over the stove and cook until heated thoroughly. You can add cheese on top and serve with chips, toss it into a salad for added protein, or make tacos! It’s so delicious!
Veggie Burger and Cauliflower Rice Stir Fry
I’m going to be honest – I’m not a huge cauliflower substitute person. I’ve made cauliflower rice before, and I wasn’t a fan, but Trader Joe’s Cauliflower Rice Stir Fry really won me over (unlike their cauliflower gnocchi. I’m sorry. I don’t see the appeal). Stir fry this rice, top with veggie burger pieces, and drizzle with coconut aminos. You will thank me later.
Mediterranean Veggie and Pesto Pasta
You’ve probably noticed by now that I gravitate towards three ingredient vegetarian meals, but it would be SO easy to add shredded chicken to these recipes. This last one is just as easy and straightforward as the rest. Boil the pasta and add 1-2 tablespoons of pesto. Toss with Mediterranean veggies and serve hot or cold!
